Meet Aldo - The Heart Behind the House of Biscotti  

Born into an Italian family of food lovers, his father and his 3 brothers early in the 1960s started a cheese and cured meats production facility in Bedford, and from an early age even during school holidays Aldo would watch and get involved in the craft of cheesemaking by hand and that's when he fell in love and wanted to be a cheesemaker to create something from milk into cheese and for 40 years that was his passion.

Then he moved to Malton, North Yorkshire for 5 years and started to make Fresh Pasta, and as a true Bedfordian finally returned back to his Italian roots in Bedford. Retirement was not for him, he always loved making something out of nothing, so here he is again making Biscotti. For the last 3–4 years, he has been perfecting his biscotti by blending authentic techniques, premium ingredients, and a love of sharing great food.
